Now:

Let's have defaults so they apply to the majority of releases:

* Separate free-threaded outputs (3.15 and later)  --> 3.14 ❌ 3.15 ✅ 3.16 ✅
* Build with tail-calling support (3.15 and later) --> 3.14 ❌ 3.15 ✅ 3.16 ✅
* Produce EXE/MSI installer (only up to 3.15)      --> 3.14 ✅ 3.15 ✅ 3.16 ❌

So right now all three apply to 2/3 releases, so default all to true.

Doesn't really matter about the overlap.
