What changes were proposed in this pull request?

Exclude the forked jersey-json from client dependencies and binary assemblies, and add a shaded JAR check for Jersey 1.x classes.

Why are the changes needed?

Hadoop 3.3.5 changed the jersey-json group ID. The old exclusions miss the fork, leaving JAX-RS providers without their required Jersey classes and causing NoClassDefFoundError during provider discovery.
